To make our tzatziki, we started off with Greek yogurt to provide that perfect, thick texture. From there, we combined cucumber, organic vinegar, some garlic, and a little dill. Just a little mint added a wonderful, minty lightness to the recipe.

Tzatziki is the perfect compliment to grilled meats and vegetables. It's served on the side with warm pita bread triangles for dipping, and is also used as a condiment for souvlaki.

INGREDIENTS

  • 2 cups plain Greek yoghurt
  • 2 cups diced cucumber
  • 1/2 cup fresh dill minced
  • 2 teaspoons fresh mint minced
  • 1 tablespoon organic vinegar
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 black olive
