With wine sauce with lots of garlic and lots of parsley. Sofrito is one of the most famous and unique dishes of Corfu. It is made with beef, cooked in a wine sauce with lots of garlic and lots of parsley, and served with rice or mashed potatoes.
INGREDIENTS
- 1kg of beef
- Salt & Pepper
- Flour
- Olive Oil
- 8-10 garlic cloves
- Bunch of parsley
- White wine
- Vinegar
- Water
- Rice or potatoes
METHOD
- Cut 1kg of beef into slices. Add salt and pepper and cover with flour. The flour will serve as the basis of the sauce.
- Fry the slices of meat in a pan in olive oil until they are golden brown. Take them out of the pan.
- Fry in the same pan 8-10 finely chopped cloves of garlic and 1 finely chopped bunch of parsley for 3-4 minutes.
- Add 2 glasses of white wine and a little vinegar and with a wooden spoon scrape the bottom of the pan to dissolve the rests of the flour.
- Add the slices of meat and a little water and simmer until the meat is tender and the sauce thickens. Be careful because the sauce will start sticking at the bottom of the pan. Scrape carefully with a wooden spoon.
- Serve with rice and/or mashed potatoes.
